THE WINE
The Cabernet Sauvignon of the Castelvecchio winery is produced with 100% Cabernet Sauvignon grapes. We are talking about the flagship of the cellar. A structured wine whose grapes are the last harvested in the winery.
THE WINEMAKING
The harvest takes place between the middle and end of October. The selected grapes are brought to the cellar for winemaking at controlled temperature in steel tanks. The wine is then moved to French and Californian oak barrels where it ages for about 12 months. This is followed by a further period of aging which lasts about another 12 months in large French and Slovenian oak barrels. After assembly and bottling, the wine rests about 6 months in the cellar before being placed on the market.
THE TASTING
Ruby red with brown tones. The aroma is elegant and very fine; the aroma of vanilla stands out and intertwines well with raspberry notes which in turn leaves room for scents of ripe fruit to close with puffs of spices that evolve with aging. Warm and velvety on the palate. This wine is certainly complex with a great structure and a perfect correspondence between the aromas and the taste. Also the persistence is very long,
FOOD PAIRINGS
It goes well with red meat and game but also with hard cheeses. Must try with beef fillet.

The winery Castelvecchio is located just above Sagrado, where the Gorizia Karst offers unthinkable corners of nature and tranquility. The view enjoyed from here is truly unique and in particular days it embraces the entire Friuli Venezia Giulia Region from the mountains to the sea.
