THE WINE
The Sauvignon from the Crastin winery is made from 100% Sauvignon grapes grown on the Rottars hill in the DOC Collio denomination of the Friuli Venezia Giulia region. Here the marly and clayey soil is particularly suited for the cultivation of the vine.
The altitude where the vineyards are located allows this vine to maintain a good mineral structure which is fundamental for the aging of the wine itself.
THE WINEMAKING
The grapes are rigorously manually harvested, they are placed in boxes and immediately taken to the cellar for wine-making. After the soft pressing, the wine ages in steel tanks and is bottled in the month of May following the harvest. The bottles rest for another 2 months in the cellar before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is intense and elegant with hints of elderberry that intertwine with notes of pepper to close with light scents of sage. Soft, round and complex on the palate, with a good persistence.
FOOD PAIRINGS
It goes well with fish and pasta dishes with savory sauces. Must try with fish soup.
