The Wine
The Valtellina Superiore Riserva from the Mamete Prevostini winery is produced with 100% Nebbiolo grapes grown in the municipalities of Sondrio, Montagna and Teglio in the heart of the Valtellina Superiore DOCG.
THE WINEMAKING
The manual harvest is late and the grapes come exclusively from the vineyards located 500 meters above sea level. After a gentle destemming, the grapes are lightly pressed and sent to the stainless steel tanks. Fermentation takes place at a controlled temperature of 25 ° C; the must macerates for 21 days on the skins. The wine is then moved to oak barrels where it ages for about 30 months. After assembly and bottling, the wine rests for another 12 months in the cellar before being placed on the market.
THE TASTING
Ruby red tending to garnet. The aroma is fine and intense with spicy hints that intertwine with notes of red fruit and dried rose jam. Dry, round and warm on the palate with a long persistence.
FOOD PAIRINGS
Excellent with red meats, game and aged cheeses. Must try with Bitt cheese.
