THE WINE
This red is a blend of 50% merlot 25% cabernet franc and 25% cabernet sauvignon; a beautiful expression of the Farra d’Isonzo (near Gorizia) area. The Colmello di Grotta winery owns over 21 hectares of land and its vineyards are divided into two areas DOP COLLIO AND ISONZO, which , despite their proximity, have different characteristics. A reality with a dual personality, infact the winery produces hand and powerful wines thanks to the marly soil of the Collio and softer and more fascinating wines thanks to the calcareous-gravelly soil of the Isonzo.
THE WINEMAKING
The grape harvest is strictly manual and takes place in the first 10 days of October. The Cabernet Sauvignon grapes are left to dry in small boxes for about a month before winemaking. After fermentation and skin maceration which last about 18/20 days in steel tanks, the wine then ages in microporous ceramic amphorae.
THE TASTING
Ruby red with light garnet reflections. The aroma is intense, fine and elegant with a slight spiciness. The fruity notes are present and soft thanks to the long aging in oak barrels. Full-bodied and harmonious on the palate, silky tannins are immediately perceived. The finish is long and persistent.
FOOD PAIRINGS
It goes well with red meats, hard cheeses and game. Try it with game dishes.
