THE WINE
The organic red Terravignata of the Borgo Paglianetto winery takes its name from the ancient times when it was said that if the rich landowners of Matelica had land cultivated with vines, they had “terre vignate”. Terravignata is a young and well balanced wine produced with Sangiovese (50%), Merlot (35%) and Tear (15%) grapes grown in compliance with the rules of the organic agriculture.
THE WINEMAKING
After the manual harvest which takes place at the end of September, only the selected grapes are brought to the cellar for winemaking. The must ferments in stainless steel tanks at a controlled temperature. The refinement takes place in steel where the wine rests on indigenous yeasts for about 6 months. Assembly, bottling and a short 2-month period of rest in the cellar follows before being placed on the market.
THE TASTING
Ruby red with purple highlights. The aroma is fine with hints of red fruits such as cherry and raspberry alternate with notes of violet, to close with light spicy puffs. Fresh and well balanced to the palate, the tannin is sweet. Good persistence with a pleasant aftertaste of pepper and licorice.
FOOD PAIRINGS
It goes well with white meats and medium-hard cheeses. Perfect with cold cuts.
