THE WINE
The Rosso di Montalcino from the Col D’Orcia winery is produced with 100% Sangiovese grapes which in Montalcino are called “Brunello” and are the same ones used to produce the famous Brunello di Montalcino. The vines belong to the winery and located in Montalcino, on the Sant’Angelo hill about 250 meters above sea level. Both the activity in the vineyard and the winemaking in the cellar follow the strict protocols of the organic disciplinary.
THE WINEMAKING
The harvest is strictly manual and once in the cellar, the grapes ferment on the skins, at a controlled temperature of 28 ° C, for a period ranging from 10 to 12 days. This step takes place in very particular steel tanks that have been designed to gently extract tannins and color. These are rather large tanks (150 hl), short and wide, The wine then ages for about 12 months in Slavonian oak barrels. After assembling and bottling, this nectar rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby red with violet reflections. The aroma is broad and fruity, with the typical hints of small ripe red fruits such as blackberry and cycles, which alternate with the spices given by the oak. It is a wine with good structure, with soft and ripe tannins. It has a long persistence and a pleasant fruity aftertaste.
FOOD PAIRINGS
It goes well with red meats, game and hard cheeses.
