THE WINE
The Gaudensius – Blanc de Noir of the Firriato winery is produced with 100% Nerello Mascalese grapes grown in the vineyards owned by the winery and located on the volcanic soils of Etna. We are in the municipality of Castiglione di Sicilia in the province of Catania and, more precisely, in the Cavanera Etnea estate.
THE WINEMAKING
The manual harvest takes place at the end of September. Once in the cellar, the selected grapes are subjected to soft pressing in whole bunches. After the first fermentation in steel, the wine is bottled for the second fermentation and it rests in contact with the yeasts for at least 32 months.
THE TASTING
Straw yellow in color tending to golden, the perlage is fine and very persistent. The nose is intense with delicate aromas of Sicilian citrus fruits that leave room for hints of brioche and anise which in turn give way to mineral notes. Delicate and fresh on the palate with an excellent structure and a perfect correspondence between aromas and flavor. Persistence is also excellent.

Perfect as an aperitif, ideal with fish even for the all meal.
