THE WINE
The Abissi wine from the Bisson winery is the classic method sparkling wine created with Bianchetta Genovese, Vermentino and Cimixia grapes. The winery was founded in Chiavari in 1978 thanks to the commitment and passion of Pierluigi Lugano and his wife Marta. Here the sandy and gravelly soil gives the wines great minerality and aroma, moreover the harsh terraces determine a heroic viticulture. The company is very attentive to all stages of production,
THE WINEMAKING
The manual harvest takes place when the grapes are not full ripe and once in the cellar only the selected ones are wine made. Fermentation takes place in steel at a controlled temperature. The wine is then bottled with selected yeasts for the second fermentation. At this point the poem is triggered because the bottles rest in stainless steel cages at the bottom of the sea; at 60 meters and at a constant temperature of 15 °. The bottles remain there for 18 months.
THE TASTING
Intense straw yellow with a fine and persistent perlage. The aroma is intense with a large bouquet that varies between musky and brackish. Dry on the palate, long and with a marked minerality.

Perfect with fish, especially with raw fish.
