THE WINE
The Syrah of the La Source winery is produced with 100% syrah grapes grown in the vineyard Saint-Pierre, owned by the winery, on a moraine and sandy soil.
THE WINEMAKING
The grape harvest is strictly manual and takes place at the beginning of October; only the selected grapes are brought to the cellar for winemaking that begins with the de-stemming. The grapes ferment on the skins for 4-5 days at a controlled temperature of 24-25 ° C. After racking, the fermentation takes place in steel tanks. The wine then ages for about 12 months in tonneaux; after bottling, it rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant and complex with pleasant hints of wood alternating with notes of resin that leaves closing with the classic scents of pepper. Dry, enveloping and well balanced on the palate with that slight spiciness due to the passage in wood. The persistence is also excellent.
FOOD PAIRINGS
It goes well with red meat, game but also hard cheeses.
