THE WINE
The Rebula of the Kabaj winery is produced with 100% Ribolla Gialla grapes that grow in the Istrian hills on the border with Italy; basically the Istrian Collio.
For the Kanaj winery their wines are their home. Their philosophy is very simple, to produce wines that they like and that consequently those who love good wine like too. The production is done in full respect of the ecosystem. The winery has been selected by the American magazine Wine & Spirits four times among the best 100 wineries in the world.
The grape harvest is strictly manual and takes place in the second half of September. The winemaking, which lasts about 30 days, is carried out in large 2400-liter oak barrels. The wine is then aged in 225 liter French oak barrels for 12 months and after assembly and bottling, it rests in the cellar for a further 6 months.
Very deep straw yellow. The aroma is elegant with fruity notes of quince that intertwine with pleasant spicy hints due to the passage in wood. Fresh and very well balanced on the palate. Full-bodied with a perfect match between flavor and aromas. The persistence is also excellent.
It goes well with fish and spicy dishes. Must try with the typical Slovenian cuisine but also with a plate of spicy olives.
