THE WINE
The Brunello di Montalcino of the Castello Banfi winery is produced with 100% Sangiovese grapes grown in the vineyards located around the Castello di Poggio alle Mura from which the wine takes its name; location in the heart of the Montalcino DOCG.
Harvesting is strictly manual and after careful selection, the grapes are brought to the cellar for winemaking.The process starts with destemming and soft pressing. The must is then decanted into steel tanks; maceration continues for about 14 days at a controlled temperature of around 28 ° C. The wine ages for at least 2 years; 90% in French oak barriques and the remaining 10% in large oak barrels. Follows bottling and a further refinement period of 12 months before being placed on the market.
Bright ruby red with garnet hues. The aroma is complex with pleasant hints of small red fruits, plums and ripe cherries which integrate well with the spicy notes and hints of licorice, tobacco and coffee. Intense on the palate; the tannins are well present but with a soft and sweet consistency. Excellent correspondence between aromas and flavor.
It can be used throughout the meal if the menu is meat-based. It goes very well with red meat and game. Must try with the classica Italian dish “Tagliata di Chianina”.
