THE WINE
The Sassabruna from Rocca di Montemassi winery is a blend of Sangiovese for 80%, Merlot for 10% and Syrah for the remaining 10%. The grapes grown in the municipality of Roccastrada, in the heart of the Tuscan Maremma and more precisely in the Sassabruna vineyards that are owned by the winery; the wine has been named after these vineyards.
THE WINEMAKING
After manual harvesting, only the selected grapes are brought to the cellar for winemaking. Fermentation takes place in steel at a controlled temperature that varies between 28 and 30 ° C and lasts for about 20 days. The wine then ages for 12 months in 350-liter tonneau and after bottling, it rests in the cellar for another 4 months before being placed on the market.
THE TASTING
Very intense ruby bone. The aroma is rich and complex with evident hints of ripe red fruit and undergrowth that alternate well with spicy notes and puffs of licorice. Full-bodied and enveloping on the palate with a persistent finish that captures the spicy aroma notes.
FOOD PAIRINGS
It goes well with red meats and hard cheeses. Must try with black truffle.
