Hello everyone, in these hot days we are all looking for quick and fresh recipes. Here it is the Summer Gazpacho by my friend Marta… quick and easy to do; i rally love it!
Ingredients for 4 people:
- 360 grams of cucumbers (about 3)
- 400 grams of natural yogurt (Greek yogurt is fine too)
- 50 grams of cream
- 20 ml of milk
- 2 shallots
- 3 strands of chives
- 1 sprig of mint
- 1 pinch of cumin
- 1/2 red pepper
- 2 tablespoons of olives (I prefer the Taggiasca ones)
- 12 cherry tomatoes
- 4 slices of bread
- salt and pepper
- extra virgin olive oil
Preparation of the ingredients:
- peel the cucumbers, remove the two ends and cut them into fillets. Sprinkle them with a little salt and let them drain for at least 30 minutes
- wash the parsley leaves, chives and mint. Finely chop everything, leaving a few mint leaves aside for decoration.
- wash and dry the cherry tomatoes and pepper
- drain the olives and cut them into rings
- Remove the crust from the bread and cut it into cubes
- peel the shallots and chop finely
The preparation of Gazpacho
Pour the yogurt into a bowl, add the cream and milk and mix so that it blends well. Now add the shallot, cumin and aromatic herbs. Mix everything together. Dry the cucumbers with absorbent paper and add them to the mixture; salt and pepper and mix everything. Cover the bowl with cling film and let it rest in the refrigerator for at least an hour, or until ready to serve.
To serve:
Cut the pepper into cubes and the tomatoes into wedges, removing both the seeds and the water. In a pan, heat a tablespoon of olive oil, add the diced bread and toast them for a few minutes, continuing to mix so not to brown them too much.
Take the mixture from the fridge and divide it into 4 bowls, add the diced pepper, the olive slices, the tomato wedges and also the toasted bread cubes, Decorate with the mint leaves you left aside and a tablespoon of oil of olive and … enjoy your meal. This is truly a very fresh dish that will give you a lot of satisfaction.
Do you want a perfect match? If you are a white wine lover i would recommend a Friulano like the one by Spolert winery. But you cold also fare it with a Rosè like the Isola by the winery Hibiscus
