THE WINE
The Cartology wine of the Alheit Vineyards winery is a blend of Chenin Blanc and Sémillon grapes grown in the sapling vineyards owned by the winery, that are located around the city of Cape Town. It was first put on the market in 2012 with the 2011 vintage and in a few months it became one of the most talked about wines in the city.
THE WINEMAKING
The motto of the winery owners (Chris and Suzaan) is simple, 99% of the work must be done in the vineyard and 1% in the cellar. After a careful harvest and a soft pressing of whole bunches only, the must is cold decanted for one night; Follows the transfer for fermentation in second passage barriques, amphorae and eggs in cement. After bottling, the wine rests for a few months in the canton before being placed on the market.
THE TASTING
Straw yellow with elegant golden reflections. The aroma is pleasant with citrus hints that alternate with floral notes of elderflower, to close with puffs of honey and hay. Fresh and markedly savory on the palate with a perfect correspondence between aromas and flavor. Persistent.

THE CELLAR
