THE WINE
The Franciacorta Brut of the Ferghettina winery is a blend of Chardonnay grapes for 85% and Pinot Noir for 15%. This Franciacorta represents the soul of Ferghettina; it is the first wine produced by the vinery; it all started with this wine; for its production are blended wines from 55 different plots located in 11 municipalities of Franciacorta.
THE WINEMAKING
The strictly manual harvest takes place towards the middle of August and only the selected grapes are brought to the cellar for winemaking. The whole grapes are gently pressed. During the winemaking only the free-run must, which has the best qualitative characteristics, is used for the production of the Franciacorta; the second pressing must is not intended for bottling. The fermentation is carried out in steel tanks at a controlled temperature that varies between 16 and 18 ° C. The base wine rests in the steel tanks until the spring following the harvest when it is bottled for the second fermentation. The wine then ages on the lees for 36 months.
THE TASTING
Straw yellow with a fine and persistent perlage; the aroma is elegant with pleasant notes of fruit such as apricot and peach that leave room for hints of lemon, scents of white flowers and light puffs of hazelnut. Fresh on the palate with a pleasant savoury note and a good correspondence between aromas and flavour. Excellent persistence.
FOOD PAIRINGS
Perfect with fish appetizers and shellfish. A must try with tuna tartare but also with sushi.
