I don’t know about you, but it is so hot I am dying of heat …. I’ll tell you right away that I am not a good cook … at my house, we eat a lot of salad, and with this heat, I don’t want to turn on the stove, so my will goes out of the window 🙂
Given my poor cooking skills, I always ask my friends for help with quick and easy recipes. Today I suggest an avocado salad with shrimp, suggested by my friend Teresa. It does not require cooking; it can be prepared in 15 minutes and is delicious!
Ingrediens for 4 persons
- 2 ripe avocados
- 150 grams of pre-cooked shrimp
- 40 gr of green radicchio
- 4 layers of dried tomatoes in oil
- lemon juice
- mustard
- extra virgin olive oil
- salt
- pepper
Preparation
Cut the avocados and remove the pit; take at least two tablespoons of pulp from each half. Cut the pulp into small pieces and add a few drops of lemon juice. Coarsely chop the dried tomatoes, put them in a bowl with the radicchio, wash and cut into pieces. Combine the avocado pulp and shrimp. Mix everything.
Emulsify three tablespoons of olive oil with a tablespoon of lemon juice and a scant tablespoon of mustard (you can add more if you like spicy!). Also, add salt and pepper to taste.
Now dress the salad with this emulsion and distribute the salad in the four avocado halves.
Leave to flavour for at least 10 minutes, preferably in the refrigerator and … enjoy your meal!
Of course, it needs to be washed down with a glass of excellent white wine, and I recommend a Malvasia (I would choose the one from Palcic) or a Sauvignon (here I suggest that of Sara & Sara) and why not …. also a good Franciacorta (and here you go with the brut by Tenuta Martinelli)
