THE WINE
The Rosé Extra Brut from the Barone Pizzini winery comes from a cuvée of Pinot Noir grapes grown in the winery vineyards immersed in the woods, for 70% and Chardonnay for 30%. You can find the combination of grapes and territory in the glass with pleasant notes of undergrowth and red fruits. This is a high-quality Rosé like the other wines of the Barone Pizzini winery
This Franciacorta is organic; the winery chooses to use, both in the countryside and in the cellar, processing methods that allow it to represent the territory to the maximum. In the vineyard, all substances used are of natural origin. Furthermore, Barone Pizzini encourages biodiversity to allow for the balance between all forms of life, plant and animal.
THE WINEMAKING
The grape harvest is strictly manual; once in the cellar, the winemaking begins with a soft pressing and a cold maceration. The wine then ferments in temperature-controlled stainless steel tanks. The wine ages approximately ten months, 50% in stainless steel tanks and 50% in second-passage French oak barriques. After blending, the wine is bottled with the yeasts for the second fermentation and rests in the cellar for thirty to forty months, depending on the vintage.
THE TASTING
Deep pink with a fine and persistent perlage; on the nose, you can immediately perceive the red fruit, with pleasant notes of raspberry, leaving room for citrus hints of grapefruit closing with undergrowth hints. Very fresh on the palate with a perfect savory note and an excellent correspondence between aromas and flavor. Excellent persistence. This is a rosé that will amaze you.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, white meats, and soft cheeses. Try it with cured meats.
