THE WINE
The brut champagne Héritage from the Yannick Prevoteau winery comes from a cuvée of 3 emblematic grape varieties of the Champagne region, pinot noir, Meunier and chardonnay. HERITAGE is a worthy representative of the BRUT champagnes without vintage from the Marne valley. Its prolonged ageing in the cellar and low dosage make it a wine accessible to all to drink in all circumstances. Undoubtedly the best ambassador of the cellar’s style. The family imprint is perceived, also because it is the first cuvée created by the Prevoteau family
We are located in Damery, in the Marne Valley department, in the heart of the Champagne region. The work on the ground and in the vineyard, combined with a production process that fully respects the environment, has allowed the winery to obtain HVE level 3 (High Environmental Value Vineyard) and VDC (Sustainable Viticulture in Champagne) certifications.
THE WINEMAKING
The grapes are harvested and wine-made in steel; the winemaking takes place without the malolactic fermentation. The wine is then bottled for the second fermentation and remains on the lees for 24 months and after disgorgement it rests for at least another 6 months. Dosage 8g/litre
THE TASTING
Golden yellow with a very fine, creamy and persistent perlage. The aroma is elegant; in addition to the classic hints of bread crust, pleasant citrus notes alternate with fruity hints of white pulp fruit to close with light flower hints. Fresh and creamy on the palate, well structured with a perfect match between aromas and flavours. Very long persistence.
FOOD PAIRINGS
Excellent as an aperitif, due to its freshness it is perfect throughout the meal if the menu is based on fish. Also try it with white meat and medium-aged cheeses.
