THE CHEESE
The Salva Cremasco DOP cheese is very similar to aged Quartirolo from Lombardia.
Born because the farmers needed a way to keep the milk when there weren’t yet any refrigeration tools. A large cheese with a high degree of acidity was therefore made; it is then aged for an average of 6 months.
The structure is crumbly and grainy with aromas of undergrowth and a persistent taste.
