The Wine
The Cabernet Sauvignon of the Poljsak winery is produced with 100% Cabernet Sauvignon grapes selected from the best vineyards of Cabernet Sauvignon owned by the winery. We are in Slovenia and, more precisely, in the Vipava Valley. Here, the sunny position of the vineyards and the excellent climate are the optimal conditions for the grapes to ripen.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The grapes macerate for nine/ten days at a controlled temperature. The wine then ages for about two years in large oak barrels and, after blending and bottling, rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant, with pleasant fruity notes where red fruits such as berries and blueberries prevail. Intense, almost spicy on the palate. Complex with well-polished tannins and a fine and silky aftertaste.
FOOD PAIRINGS
Perfect with grilled red meats but also with roasts. Try it with lightly smoked cold cuts.
