The Wine
The Sauvignon of the Poljsak winery is produced with 100% Sauvignon grapes selected from the best vineyards of Sauvignon owned by the winery. We are in Slovenia and, more precisely, in the Vipava Valley. Here, the sunny position of the vineyards and the excellent climate are the optimal conditions for the grapes to ripen.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The wine ages in steel tanks and is bottled about a year after the harvest. This white wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Yellow with marked greenish reflections. The aroma is intense with pleasant fruity scents that leave room for notes of anise and sage to close with puffs of tomato leaf. Long and persistent on the palate, fresh and well balanced with a pleasant correspondence between aromas and flavours.
FOOD PAIRINGS
Also excellent as an aperitif, it goes well with fish and vegetables but also with soft cheeses. Try it with risotto with asparagus.
