The Malvasia wine from the Korsic winery
The Malvasia Collio DOC of the Korsic winery is produced with 100% Malvasia grapes grown in the vineyards owned by the winery, which are located in the heart of the Collio in Friuli Venezia Giulia.
Here the soil is made up of ponca (stratified marls and sandstones of Eocene origin), which is rich in tiny fossils that nourish and enrich the vines, giving the wines a minerality and salinity that makes them unique.
This area is unique; the warm currents of the Adriatic Sea keep the grapes dry, while the Julian Alps to the north protect them from cold winds and rain.
THE WINEMAKING
The manual harvest takes place in the last ten days of September, Once in the cellar, the grapes are de-stemmed and subsequently softly pressed; the must obtained is clarified by decanting. Fermentation takes place in stainless steel containers at a controlled temperature. The wine ages in steel until the end of February, is bottled in March, and rests for a few months in the cellar before being placed on the market.

Straw yellow with golden reflections. The aroma is fresh and fruity with pleasant hints of peach, pineapple and golden apple, which intertwine with acacia honey and cinnamon cents, which leaves room for puffs of candied fruit and orange peel. Intense and mineral on the palate, this wine is fresh and persistent, with a good correspondence between the flavour and the aromas.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, even raw, with white meats and medium-aged cheeses.
