The Wine
The Pinot Noir of the Franz Haas winery is produced with 100% Pinot Noir grapes grown in vineyards owned by the winery. Located in South Tyrol and, more precisely, in the province of Bolzano. The vines are located in areas carefully chosen for their microclimate and which, over the years, have proven to be ideal for producing this wine.
These vineyards are located at altitudes between 350 and 700 meters above sea level and on different terrains. The high density of the plants varies from 8,000 to 12,500 per hectare, allowing the production of the highest quality of grapes. There is also an extreme selection of clones with meagre yields, allowing for a stable but continuous evolution of quality over the years.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The must ferments in open tanks; this technique allows the must to come into contact with the skins thanks to frequent pumping over and punching down. This technique enables the colouring substances and aromas contained in the peel to transfer to the wine. The wine then ages for at least twelve months in barrique, and after bottling, it rests for twelve months in the bottle before being placed on the market.
THE TASTING
Ruby red. The aroma is elegant, with pleasant notes of red fruits where cherries and berries prevail, which leave room for spicy hints of pepper and cloves to close with scents of leather. Warm and enveloping on the palate with elegant, velvety and well-polished tannins. Excellent correspondence between aromas and flavours. The finish is intense and also very persistent.
FOOD PAIRINGS
It goes well with red meats, game but also with hard cheeses.
