The Wine
The Prosecco Rosé Brut vintage from the Bervini winery is bland of 85/90% Glera grapes (depending on the vintage) and 15/10% Pinot Noir grapes (depending on the vintage). All the grapes of the Bervini winery are grown in the owned vineyards located in Sequals in the province of Pordenone, in the heart of the DOC Grave del Friuli. All the vineyards don’t use herbicides, chemical fertilizers and synthetic insecticides but only products the community regulation allows. The winery believes organic farming is the right choice to protect the environment and human health. For them, it is essential to work as nature commands.
This prosecco is part of the Natura line, a remarkably fresh, elegant and pleasant sparkling wines line. This prosecco’s excellent and elegant bubbles caress the palate and make you want to keep drinking.
THE WINEMAKING
After harvesting, the selected grapes are taken to the cellar for winemaking. After a soft pressing, the Glera grape must is separated from the skins and left to ferment in steel tanks at a controlled temperature of 16°. Pinot Noir, on the other hand, is left to macerate on the skins for 7/8 days; and after pressing, it ages in steel tanks. The wine is then blended and moved to an autoclave for the second fermentation (Martinotti method), remaining for at least 70 days.
THE TASTING
Light pink, slightly orange. The perlage is fine and persistent, so persistent that it recalls the bubbles of the classic method wines. The aroma is delicate, with pleasant floral scents that intertwine with fruity notes where berries prevail. Fresh on the palate with an excellent correspondence between aromas and flavour.
FOOD PAIRINGS
Perfect as an aperitif but also with fish appetizers. Try it with pizza!
