The wine Refosco dal Peduncolo Rosso Carso DOC by Castevecchio winery
The Refosco dal Peduncolo Rosso from the Castelvecchio winery is made from 100% Refosco dal Peduncolo Rosso grapes; an autochthonous vine grown in the heart of the Carso DOC in the province of Gorizia.
THE WINEMAKING
After the harvest and the selection of the grapes, it is time for the winemaking at controlled temperature in steel tanks. The wine is then moved to French and Californian oak barrels where it ages for about 12 months. This is followed by a further period of aging which lasts about another 12 months in large French and Slovenian oak barrels. After assembly and bottling, the wine rests for about 6 months in the cellar before being placed on the market.
Tasting the Refosco by Castelvecchio
Very deep ruby red; the aroma is elegant with hints of berries that intertwine well with spicy notes generated thanks to the aging in wood. Dry on the palate, a full-bodied wine with a vaguely bitter finish.
FOOD PAIRINGS
It goes well with red meat, game and hard cheeses. Must try with the dishes of Friuli cuisine.
