THE WINE
The classic method Vulpes Brut by Mario Colla of the Del Poggio winery is part of the Vulpes line; this line takes its name from the stream that crosses the property and recalls the presence of the typical animals of the Friulian hills, the foxes. This classic method is the wine the winery creates to commemorate the company’s founder Mario Colla who in 1977 bought a part of today’s estate to build a summer house. In addition to the home, he also made a cellar; everything started from that cellar.
THE WINEMAKING
The grape harvest is strictly manual and occurs between the end of August and the beginning of September. Once in the cellar, the wine-making starts with the grapes’ soft pressing, followed by the steel fermentation at a controlled temperature. The wine then ages for one part in oak barriques and the other part in steel tanks; in the spring following the harvest, the wine is bottled for the second fermentation and rests on the lees for at least 24 months.
THE TASTING
Straw yellow with a fine and persistent perlage; the aroma is delicate and elegant with pleasant hints of white flowers that alternate with scents of white paste fruits to close with hints of crusty bread. Dry and well-structured on the palate. Excellent correspondence between taste and aromas. Persistent.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish. Ideal throughout the meal with a fish and vegetable menu.
