The Wine
The Surfine cuvée sparkling wine from the Foss Marai winery was born because the cellar wanted to create a more refined version of the historic Cuvèe born in 1997. Foss Marai’s goal is to have a top-level sparkling wine; for this purpose, a part of the base wine ages in small barrels using the micro-oxygenation technique, which matures the noble tannins and enhances the flavour of the cuvée itself.
THE WINEMAKING
The harvest is manual, and only the selected ones are brought to the cellar for winemaking. Once in the cellar, the winemaking starts with a soft pressing of the berries. Fermentation at controlled temperature, a part of the wine ages in steel vats while the other in small barrels using the micro-oxygenation technique, which matures the noble tannins and enhances the flavour. The cuvée is then composed and moved into an autoclave (Martinotti method) for the sparkling process. Foss Marai is one of the best known and most appreciated names in the world of Prosecco, a winery attentive to quality that offers precious products to the bubbles lovers.
THE TASTING
Straw yellow with a fine and persistent perlage; the aroma is characterized by a delicate scent of yellow fruit, alternating with notes of wildflowers with puffs of pepper. Very balanced on the palate, full-bodied, fresh and intense, with an excellent correspondence between the aromas and the flavour.
FOOD PAIRINGS
It goes well with fish, even raw and white meats. Try it both with cold cuts.
