THE WINE
The Ribolla Gialla of the Di Gaspero winery is produced with 100% Ribolla Gialla grapes grown in vineyards owned by the winery. We are in Dolegnano, a small hill town in the heart of the DOC Colli Orientali del Friuli, located in the province of Udine. This area is known worldwide for the quality of the wines produced. This Ribolla Gialla, a native wine of Friuli Venezia Giulia, is a perfect example of this quality.
THE WINEMAKING
The harvest occurs in the first ten days of September, and only the selected bunches are taken to the cellar for winemaking. After destemming and soft pressing, the must ferments in steel tanks at 16°C for at least fifteen days. A period of refinement follows, always in steel, which varies according to the vintage. After blending and bottling, the wine rests for a period in the cellar before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is delicate, with pleasant hints of yellow-fleshed fruit that leave room for notes of acacia flowers. Dry on the palate, fresh with good sapidity and excellent persistence.
FOOD PAIRINGS
Perfect with fish, even fried. Try it with seafood pasta but also with truffle-based dishes.
