THE WINE
The Neri di Toni from the Di Gaspero winery is a particular wine; we know it is a red wine, and the grapes are grown in the estate’s vineyards. But we only know a little; the producer has created a wine that represents himself but has decided not to share the grape variety used with us. We only know that this bottle, like all the labels of the Di Gaspero cellar, fully represents the essence of the winery itself.
Curious, the name of the wine “Neri di Toni” is in the Friulian language; in Italian, it translates as “Antonio’s red wine”.
We are in Dolegnano, a small hill town in the heart of the DOC Colli Orientali del Friuli, located in the province of Udine. This area is known worldwide for the quality of the wines produced.
THE WINEMAKING
The harvest occurs in the second ten days of October, and only the selected bunches are taken to the cellar for winemaking. After destemming and crushing the bunches, the must ferments on the skins for eight to ten days at a controlled temperature of 24-25°C to allow the wine to accentuate its varietal characteristics and acquire its deep red colour. The wine then ages in wooden barrels, and after blending and bottling, it rests in the cellar before being placed on the market.
THE TASTING
Deep ruby red, the aroma is intense with pleasant notes of red fruits such as blackberry and raspberry, which alternate with spicy puffs. Decisive and well-balanced on the palate, with a good correspondence between aromas and flavour and a soft and persistent aftertaste.
FOOD PAIRINGS
Perfect with red meats, hard cheeses and game. Try it with the classic Italian bollito.
