The Wine
The Zelen of the Poljsak winery comes from a selection of Zelen grapes from the best vineyards owned by the winery. Zelen is a native Slovenian white grape variety. In English, the name means “green” or “greener” and derives from the emerald green colour of the must. We are in Slovenia and, more precisely, in the Vipava Valley. Here, the sunny position of the vineyards and the excellent climate are the optimal conditions for the grapes to ripen.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The wine ages in steel tanks and is bottled about a year after the harvest. This white wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Light yellow with greenish reflections. The aroma is fresh and aromatic with pleasant fruit notes where the green apple prevails, intertwining with herbaceous hints, leaving room for spicy sensations. Very fresh and mineral on the palate, nicely balanced with a perfect correspondence between the aromas and the taste. The finish is long and with a nice acid note.
FOOD PAIRINGS
It goes well with fish, white meats, medium-hard cheeses, and eggs. Try it with a nice vegetable omelette.
