THE WINE
The Ribolla Gialla of the Sturm winery comes from 100% Ribolla Gialla grapes grown in the municipality of Cormons in the province of Gorizia, on a plateau with mainly gravelly and calcareous soil. The Ribolla Gialla vines of the Sturm winery have an average age of thirty years. This native Friulian wine was once present on all the tables of Friulian farmers; today, it is a fresh wine, anything but bland, known worldwide.
THE WINEMAKING
The harvest is strictly manual and takes in the month of September. Once in the cellar, the selected grapes are destemmed and cold macerated. The must then ferments in steel tanks at a controlled temperature of 16-18°C; the wine then ages, in steel tanks, on the lees, for a period that varies from year to year. After bottling, the wine rests in the cellar for a few months before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is pleasantly fresh with notes of wildflowers that leave room for fruity hints where the green apple prevails to close with puffs of lemon leaves. Harmonious and elegant on the palate, with a perfect match between aromas and flavours. Persistence is also good.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, even raw. Try it with shellfish.
