THE WINE
The Viognier of the Rocca di Montemassi winery comes from 100% Viognier grapes grown in vineyards owned by the winery in the municipality of Roccastrada. The Viognier grape is of French origin; in France, it is used to produce Condrieu wine, a rare, expensive wine much sought after by lovers of particular wines. THE WINEMAKING
The grapes are harvested by hand only when perfectly ripe and placed in small crates to guarantee their integrity during transport. Once in the cellar, the grapes are subjected to cryomaceration for 24 hours and then softly pressed. The must ferments at a controlled temperature of about 18° C. to safeguard the organoleptic characteristics of the wine itself. Fermentation takes place in Slavonian oak barrels and tonneaux. The wine then rests in the same barrels for about eight months. After blending and bottling, the wine rests in the bottle for at least one year before being placed on the market.
THE TASTING
Bright golden yellow. The aroma is intense and complex, with delicate balsamic notes alternating with hints of vanilla. Fragrant on the palate, this wine has an excellent structure; delicately aromatic with a pleasant savoury and mineral vein and excellent persistence.

Perfect with shellfish, fish or vegetable first courses. Try it with fresh sheep or goat cheese.
