I discovered the baked feta with cherry tomatoes, and even if it’s hot and you certainly don’t want to turn on the oven, I have to share this super quick and straightforward recipe because it’s delicious…. Trust me, it will solve a lot of dinners, and you’ll take 10 minutes to prepare it.
Ingredients for 4 persons
- 1 kg of cherry tomatoes
- 4 slices of feta
- Oives (I love Taggiasca olives, and I use those, but you choose the ones you like best)
- Oregano
Preparation
How do you prepare this baked Feta with cherry tomatoes? Wash and cut the cherry tomatoes in half; cut the Feta and the olives into large pieces (if they are small, like the taggiasche, you can leave them whole).
Now you need tin foil; here, you can decide whether to make four single portions or a single batch and then divide them once they come out of the oven. I like the single portion and then serving it directly with the tin foil. Then place the tin foil on the oven-dripping pan, arrange the cherry tomatoes (if you make single portions, a quarter of the tomatoes for each bit), add the feta cheese cut into pieces and the olives. Add oregano or other herbal spices to taste.
Close the foil, make it look like a candy wrap, and bake at 180 degrees (static oven) for at least thirty minutes.
After about 30 minutes, you will smell a delicious aroma in the kitchen, and your dish will be ready.
If you have made single portions, you can put each candy wrap in each plate, open it and serve it; if instead, you have opted for a single foil, open the foil, divide the contents into four and serve.
Tip: A friend of mine uses this dish as a sauce for pasta… think about it; it could be an idea!
What do we drink?
So here I would combine it with a lovely fresh white like a Falanghina from the Masseria Altemura winery but also a Ribolla Gialla like that of Vigna Lenuzza; then, if I wanted to venture a red, I would pair it with the sparkling Raboso from the Bervini winery.
