THE WINE
Conte Giangirolamo from the Tenute Girolamo winery comes from a blend of 50% Primitivo and the other 50% Negroamaro. All the grapes are grown in the vineyards owned by the winery, located in the Itria Valley in Puglia, 450 meters above sea level. Here, the soil is calcareous and rich in red earth.
THE WINEMAKING
The harvest is strictly manual; only the selected grapes are taken to the cellar for winemaking. Once in the cellar, after a soft maceration, the wine ferments and ages in French oak vats for a period between 22 and 24 months. After blending and bottling, the wine rests for another six months in the cellar before being placed on the market.
THE TASTING
Intense ruby red with violet reflection; the aroma is pleasantly fruity with hints of cherry that alternate with blackberry and blueberry to close with spicy scents of vanilla and cocoa. Harmonious and dry on the palate with silky and well-polished tannins. Excellent persistence and correspondence between aromas and flavours.
FOOD PAIRINGS
Excellent with red meats and aged cheeses. Also, try it with cold cuts.
