THE WINE
The Time Machine from the Le Due Torri winery is a white wine that comes from a blend of Istrian Malvasia for 40%, Chardonnay for
34%, Riesling for 16% and Friulano for 10%. It is so called because it was created to challenge time and recall ancient flavours.
We are in Corno di Rosazzo, an area of Friuli in the heart of the DOC Friuli, particularly suited to cultivating vines. Here, the winemakers are of few words but very attached to their land and traditions.
Another watchword of the Le Due Torri winery is biodiversity; four hectares of natural forest embrace the vineyards, creating a unique microclimate.
THE WINEMAKING
The harvest at Le Due Torri is always manual; in this case, it takes place around mid-September and once selected, the best grapes are taken to the cellar for winemaking. The grapes macerate for 24 hours and then ferment in steel with the addition of selected yeasts. The refinement lasts about eight months with weekly bâtonnages and takes place in 500-litre tonneaux of untoasted cherry, untoasted mulberry and medium-toasted French oak. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Straw yellow, the aroma is pleasantly fruity with hints of ripe peach that alternate with notes of apricot to leave room for acacia flowers and hawthorn traces. Fresh on the palate with a good body and a nice savoury note. The correspondence between aromas and flavour is also good. Persistent.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish-based menus and cold cuts.
