The wine Amarone della Valpolicella Classico by Tommasi winery
The Amarone della Valpolicella Classico from the Tommasi winery is a blend of 50% Corvina, 30% Corvinone, 15% Rondinella and Oseleta grapes for the remaining 5%. All the grapes are grown in the vineyards owned by the winery in the prestigious Crus of La Groletta and Conca d’Oro in the hilly area of Valpolicella Classica. This Amarone is one of the flagships of the Tommasi winery, elegant, soft and complex, an almost unique wine.
THE WINEMAKING
After manual harvesting, the selected grapes are left to dry for three months in well-ventilated rooms before winemaking. Once in the cellar, the must ferment for approximately twenty-five days at a controlled temperature ranging from twenty-five to thirty degrees centigrade. The wine then moves to thirty-five hectoliter Slovenian oak barrels, where it ages for three years. After blending and bottling, the wine rests in the cellar for a few more months before being released on the market.
