The wine Valpolicella DOC by Tommasi winery
The Valpolicella DOC from the Tommasi winery is a blend of 60% Corvina grapes, 30% Rondinella and Molinara for the remaining 10%. All the grapes are selected from parcels grown in the vineyards owned by the winery in Valpolicella’s hilly area. It is a simple wine that expresses joy and lightheartedness.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. Fermentation lasts about twelve days in steel at a controlled temperature ranging from twenty-five to thirty degrees centigrade. The refinement also occurs in steel, where the wine rests for at least six months. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
Tasting the wine by Tommasi winery
Intense and clear ruby red. The aroma is fragrant, with the typical hints of crunchy cherry alternating with red fruit scents. Fresh and well-balanced on the palate with an elegant correspondence between aromas and flavour, with a pleasantly persistent finish.
