THE WINE
The Cabernet Sauvignon reserve “Hussonet” from the Haras de Pirque winery is produced with 100% Cabernet Sauvignon grapes, which grow in the vineyards owned by the winery. The grapes used for this particular wine are a selection from the best vineyards of Haras de Pirque, which grow under organic farming. We are in the Maipo Valley; here, the winery’s vines are at altitudes ranging from 550 to 650 meters above sea level.
THE WINEMAKING
The harvest is strictly manual and takes place only when the grapes are perfectly ripe. Each parcel is harvested, and wine made separately. Once in the cellar, the winemaking starts with cold maceration, which lasts from three to five days. Fermentation takes place in steel tanks with the sole use of indigenous yeasts. The wine then ages in oak barriques for at least twelve months, and after blending and bottling, the wine rests for a few more months in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant with pleasant hints of red fruit such as cherry, blueberry and blackberry, which leave room for balsamic herbs to finish with light spicy puffs. Well structured on the palate, the tannins are essential but very well integrated and silky. The correspondence between aromas and flavour is excellent. Long and persistent finish.
FOOD PAIRINGS
It goes well with red meat and medium-hard cheeses but also with pasta with meat sauces. Try it with cold cuts.
