THE WINE
The Cabernet Sauvignon of the Las Condes winery comes from 100% Cabernet Sauvignon grapes grown in the vineyards owned by the winery. We are in the Maule Valley in central Chile; thanks to the climate and position, this valley is the most suitable area for producing excellent wines in Chile.
THE WINEMAKING
The harvest is strictly manual and occurs when the grapes are perfectly ripe. The winemaking occurs in steel tanks at a controlled temperature, and the grapes macerate for at least two weeks. The refinement involves a quick passage of four months in wooden barrels. It was chosen to refine in wood rather quickly to not allow the wood itself to “hide” the characteristics given by the Chilean soil. The soil in this area is rich in stones, gravel and sand. After blending and bottling, the wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant with pleasant hints of red fruit such as cherry, blueberry and blackberry, which leave room for balsamic herbs to finish with light spicy puffs. Well structured on the palate, the tannins are present but very well integrated and silky. The correspondence between aromas and flavour is excellent. Long and persistent finish.
FOOD PAIRINGS
It goes well with red meat, medium-hard cheeses, and pasta with meat sauces. Try it with grilled meat.
