THE WINE
The Blanc de Blanc, brut champagne from the Henriot winery, comes from Chardonnay grapes grown mainly in the renowned Grands Crus de la Côte des Blancs in the Champagne region. The winery created this bubble to pay homage to the best particles of this vine, and it has now become one of the flagships of the winery, appreciated and renowned internationally.
THE WINEMAKING
The harvest is strictly manual, and each particle is harvested and wine made separately. Once in the cellar, the winemaking starts with a soft pressing of the grapes; the free-run must ferment in steel at a controlled temperature. After a few months of refinement, the winery forms the cuvée; the cuvée is 60% made of freshly wine-made grapes and the remaining 40% of reserve wines from previous years from the same vineyard. The winery has created the cuvée with reserve wines from previous years to give more character and finesse to the cuvée itself. The wine is then bottled with selected yeasts and left to rest for four to five years.
THE TASTING
Golden yellow with crystalline reflections and a very fine, creamy and persistent perlage; the aroma is intense and elegant with pleasant floral notes that alternate with fruity hints such as peach and apricot, continuing with hints of lemon custard and finishing with puffs of honey. This Blanc de Blanc from the Henriot winery is fresh and well structured on the palate, creamy and pleasantly salty with a very long finish.
FOOD PAIRINGS
Due to its freshness, this blanc de blanc is perfect throughout the meal if the menu includes fish, even raw. It also goes well with soft cheeses.
