THE WINE
The Picolit of the Sara & Sara winery is produced with 100% Picolit grapes (native Friulian vine,) grown in the vineyards owned by the winery and located in Savorgnano in Torre in the province of Udine. We are about 180-350 meters above sea level, and here the hilly terrain is rich in marl and sandstone.
The winery is organic, from the vineyard to the cellar. There is no use of herbicides, only the mowing of the grass, and for the defence of the territory, only natural methods are practised.
There are no clarifications or stabilizers in the wines. The winery uses only natural decanting, and some wines are not even filtered.
Of this wine, 1200 bottles are produced every year.
THE WINEMAKING
A part of the grapes is harvested before it reaches ideal ripeness and is left in the fruit cellar to dry for a period ranging from 30 to 60 days. The other part of the grapes is left on the vine to sub-ripen. In the years when Botrytis developes, only the botrytized grapes are manually harvested. In years in which Botrytis does not form, the grapes are harvested (always by hand) between the end of October and the beginning of November. This harvesting method allows the winery to guarantee excellent acidity to the wine, which can be preserved for 10 to 15 years and ensures a vibrant olfactory and gustatory heritage.
After soft pressing, the must ferments at a controlled temperature with the sole use of natural yeasts. The wine then ages in French oak barriques for eighteen months and, after bottling, rests for another eight months before being placed on the market.
THE TASTING
Golden yellow. The aroma is delicate and very fine, with pleasant dried fruit notes that alternate with hints of candied fruit, finishing with puffs of honey. Sweet but not cloying and slightly tannic on the palate, with a perfect match between aromas and flavour. This picolit is very refined with excellent persistence.
FOOD PAIRINGS
This Picolit is a typical dessert wine that goes well with dry pastries and with blue cheeses, accompanied by fruit jams.
