THE WINE
The Pinot Noir from the Fiegl winery comes from 100% Pinot Noir grapes grown in the vineyards owned by the winery. We are in Oslavia, a small hamlet of Gorizia, right on the border with Slovenia. The ventilated microclimate, the important temperature variations between day and night, and the soil that they call ponca here make this area of Friuli Venezia Giulia an ideal place for growing vines.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are taken to the cellar for winemaking. Winemaking and fermentation are carried out in a traditional way; the wine ages in large 15-hl barrels for a period that varies depending on the vintage. Once the right level of maturation has been reached, the wine is assembled, bottled, and left to rest in the cellar for a few months before being placed on the market.
THE TASTING
Pale red, the aroma is elegant, with hints of cherry, raspberry, strawberry, and blueberry fruit. These notes leave room for floral scents of violet, which in turn leave room for puffs of vanilla and delicate liquorice, given by the passage in wood. Warm and soft on the palate, this is a great, refined, elegant wine with velvety tannins. The correspondence between taste and aromas is excellent. Persistence is also good.
FOOD PAIRINGS
Excellent with red meat but also with medium-hard cheeses. Try it with a plate of mixed cold cuts.
