THE WINE
The Trento DOC Blauwal Rosé extra brut from the Cesconi winery comes from 100% Pinot Noir grapes grown in the winery’s vineyards, which are all located on the Pressano hill at an altitude between 250 and 500 meters above sea level. All the vineyards have an average age of thirty years.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are taken to the cellar for winemaking. After soft pressing, the wine ferments in steel tanks; the still wine then ages in used oak barriques. The wine is then bottled for fermentation in the bottle and rests on the yeasts for at least thirty-six months. After disgorgement, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Pale pink with a fine and persistent perlage; the aroma is intense with pleasant fruity notes of raspberry and cherry, leaving room for light hints of biscuit to finish with hints of bread crust. Very fresh, creamy and dry on the palate, the Blauwal Rosé from the Cesconi winery is an elegant wine with an excellent correspondence between aromas and flavour and a long and persistent finish
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish dishes, even raw ones. It is perfect throughout the meal if the menu is fish-based.
