THE WINE
The Blanc de Blanc pas dosè from the Pié di Mont winery is produced exclusively with Chardonnay grapes. The vineyard is located at the foot of Mount Calvario, which, benefiting from a South-East exposure, guarantees a significant temperature range thanks to the sun setting behind the mountain in the early afternoon.
This temperature variation favors the production of a sparkling wine with an intense character, enriched by a balanced acidity. The Chardonnay grapes intended for Blanc de Blanc are carefully selected and vinified only in the most favourable years, with a limited production of around 2000 bottles, ensuring the highest quality and exclusivity.
THE WINEMAKING
The harvest begins on September 1st, with a careful and loving selection of the grapes which are delicately placed in the boxes; everything happens during the coolest hours to preserve its freshness. The magical process of transforming grapes into wine begins with a delicate white winemaking, where the grapes are gently pressed and the juice is separated from the skins, followed by a refermentation that ends in May. The wine is left to rest on the yeasts for at least 42 months, and then continues to mature in the bottle for a further 10 months after disgorgement.
THE TASTING
The colour is straw yellow, with a persistent and silky perlage. On the nose, citrus notes are distinguishable, mainly pink grapefruit and bergamot, followed by aromatic herbs and rosemary accents. It is a dry and linear wine on the palate, characterized by a marked minerality and an elegant overall harmony.
FOOD PAIRINGS
This Blanc de Blanc from Piè di Mont is perfect with fish but also pairs well with cotechino and fattier cured meats, such as lard. Try it with fried fish.
THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano.
