THE WINE
The Ribolla Giallo from the Crastin winery is made from 100% Ribolla Gialla grapes grown on the Rottars hill in the DOC Collio denomination of the Friuli Venezia Giulia region. Here the marly and clayey soil is particularly suited for the cultivation of the vine.
The altitude where the vineyards are located allows this vine to maintain a good mineral structure, furthermore, to maintain a high level of quality, the winery regularly carries out thinnings given that this vine is very generous and produces a lot of fruit.
THE WINEMAKING
The grapes are rigorously manually harvested, they are placed in boxes and immediately taken to the cellar for wine-making.Once in the cellar, 70% of the grapes are softly pressed and left to ferment in steel tanks. The remaining 30% instead ferments on the skins and then ages for about eight months in oak barrels. The wine is assembled and bottled in May following the harvest. The bottles rest for a minimum of two months in the cellar before being placed on the market.
THE TASTING
Intense golden yellow. The aroma is elegant, with pleasant fruity hints of apple and medlar that intertwine with notes of aromatic spices such as thyme and yellow flowers. Very fresh on the palate, a typical characteristic of Ribolla, this wine has great character with an excellent correspondence between aromas and flavours.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, white meat and vegetables. Try the mixed cold cuts.
