THE WINE
The Ribolla Gialla from the Ermacora winery comes from 100% Ribolla Gialla grapes grown in the vineyards owned by the winery. We are in the hills of Ipplis in the heart of the Colli Orientali del Friuli DOC in Friuli Venezia Giulia. Explaining this area of Friuli is difficult, you have to come and visit it to discover a series of terraced hills, protected by the Julian Prealps which enjoy the breezes of the Adriatic Sea. A set of vines alternating with woods rich in biodiversity, in short, a true paradise.
The Ribolla Gialla is a native Friulian vine cultivated on these lands for over seven hundred years; over time, it has given much prestige to the wine production of Friuli Venezia Giulia. We are talking about a wine of character with excellent acidity perfect as an aperitif or throughout the meal. In short, the perfect white for all occasions.
THE WINEMAKING
The harvest is manual. Once in the cellar, after destemming the grapes are softly pressed and left to ferment in steel tanks at a controlled temperature of 17/18 °C. The wine ages in steel tanks for at least six months. After blending and bottling, it rests for a few more months in the cellar before being placed on the market.
THE TASTING
Pale straw yellow, the aroma is elegant with pleasant fruity hints where Williams pears and grapefruit stand out, leaving room for notes of aromatic herbs and puffs of fern. Soft and savory on the palate, this is a well-balanced wine with an excellent correspondence between aromas and flavor. A long finish that invites you to drink.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with all fish, including raw and medium-hard cheeses. Try it with a salmon tartare.
