THE WINE
The Sauvignon from the Ermacora winery comes from 100% Sauvignon grapes grown in the vineyards owned by the winery. We are in the hills of Ipplis in the heart of the Colli Orientali del Friuli DOC in Friuli Venezia Giulia. Explaining this area of Friuli is difficult, you have to come and visit it to discover a series of terraced hills, protected by the Julian Prealps which enjoy the breezes of the Adriatic Sea. A set of vines alternating with woods rich in biodiversity, in short, a true paradise.
The Sauvignon is a noble vine from the Loire Valley; it found its natural habitat in Friuli. We are talking about an elegant wine with unmistakable aromas.
THE WINEMAKING
The harvest is manual. Once in the cellar, after destemming the grapes are softly pressed; a part of the pressed grapes is selected for cryomaceration, i.e. a low-temperature maceration which allows more aromas to be extracted. The rest of the grapes are softly pressed and left to ferment in steel tanks at a controlled temperature of 17/18 °C.
All wine ages in steel tanks for at least six months. After blending and bottling, it rests for a few more months in the cellar before being placed on the market.
THE TASTING
Bright straw yellow, the aroma is elegant with pleasant citrus scents of orange, mandarin, and bergamot, which leave room for notes of fresh aromatic herbs to close with hints of lavender. Fresh and savory on the palate with an excellent correspondence between aromas and flavor and a long and persistent finish.
FOOD PAIRINGS
It goes well with fish and white meats but also with medium-hard cheeses and cold cuts. Try it with a roast veal.
