THE WINE
Le Général Dallemagne extra brut from the Casata Monfort winery is a cuvée of 80% Chardonnay and 20% Pinot Noir grapes grown in the property’s vineyards located in Lavis, a municipality in the province of Trento, particularly suited for vine cultivation. This sparkling wine is the outcome of a dream involving Federico Simoni (the owner of Casata Monfort) and the winemaker Maurizio Iachemet; both wanted to create a reserve sparkling wine that fully represented the land of origin and the family’s origins. Mission accomplished with a sparkling wine full of charm.
Trento DOC is synonymous of elegance and quality, the first sparkling wine “controlled denomination of origin” in Italy and a point of reference in the champagne method sector. Today it covers about 30% of the national sparkling wine production. All the vineyards linked to the Trento DOC are located on slopes at medium altitude, with climates characterized by strong temperature variations. This kind of climate is the winning weapon as it gives the grapes aromatic complexity and fragrance.
THE WINEMAKING
The manual harvest takes place in the second half of September; the winemaking in white begins in temperature-controlled steel tanks and continues in French oak barriques, where the wine rests until the spring following the harvest. Once the cuvée is created, the wine is bottled with the yeasts and left to rest for at least 64 months for secondary fermentation. After disgorgement, the sparkling wine rests for a few more months in the cellar before being placed on the market.
THE TASTING
Straw yellow with a very fine and persistent perlage; the aroma is fragrant with pleasant scents of bread crust that intertwine with notes of vanilla to finish with a light citrus hint. Rich and well structured on the palate, fresh with a perfect correspondence between aromas and flavor and a very long and persistent finish. A sparkling wine with a fresh bouquet full of charm
