THE WINE
The Blanc de Blanc sparkling wine pas dosé from the Dorigo winery comes from 100% Chardonnay grapes grown in the vineyards owned by the winery. As the winey owners say, wine is the food of the soul and it must be good. Their mission is to make good wine and, this Blanc de Blanc is a perfect example of quality.
THE WINEMAKING
The harvest is manual. Once in the cellar, the winemaking begins with a soft pressing; the must ferments in second passage barriques; the refinement occurs in wood. The wine is then bottled for the second fermentation and rests on the yeasts for five years. Nice to know the “liqueur de tirage”, used by the winery is a little secret lasting more than 30 years.
THE TASTING
Straw yellow with golden reflections and a very fine and persistent perlage; the aroma is elegant, with pleasant toasted notes of bread crust, hazelnuts, and almonds leaving room for mineral tones to close with fruity hints of apricot and peach. Creamy and fresh on the palate, with a good savory note and an almost perfect correspondence between aromas and flavor. Persistence is also excellent.
FOOD PAIRINGS
Perfect with raw fish, this wine can be drunk throughout the meal if the menu is fish-based. Try it with shellfish.
