THE WINE
The Pignolo doc from the Ermacora winery comes from 100% Pignolo grapes grown in the vineyards owned by the winery. We are in the hills of Ipplis in the heart of the Colli Orientali del Friuli DOC in Friuli Venezia Giulia. Explaining this area of Friuli is difficult, you have to come and visit it to discover a series of terraced hills, protected by the Julian Prealps which enjoy the breezes of the Adriatic Sea. A set of vines alternating with woods rich in biodiversity, in short, a true paradise.
Pignolo is an indigenous Friulian grape variety that generates a red wine you don’t expect in the region famous for its white wines. The winery compares it to the hand of a Friulian farmer, calloused but soft at the same time. Pignolo is a wine that needs time to soften and become so good and, once you taste it, you will never let it; we are sure of it!
THE WINEMAKING
The harvest is by hand. Once in the cellar, after destemming, the grapes macerate in steel tanks for a period that varies between 10 and 12 days. After the fermentation phases, the wine rests, in small french oak barriques, for at least 48 months. After blending and bottling, it rests for a 6 more months in the cellar before being placed on the market.
THE TASTING
Of an almost impenetrable intense ruby-red colour. The aroma is intense with pleasant hints of red fruit where black cherry and blackberry prevail, leaving room for spicy hints of nutmeg, black pepper, and cloves, finishing with puffs of resin and burnt wood. Full-bodied and well-balanced on the palate with intense but well-smoothed and integrated tannins, and a good correspondence between aromas and flavour. Persistence is also good.
FOOD PAIRINGS
This Pignolo doc from Ermacora goes well with red meats, game and hard cheeses. Try it with legume soups.
